Once upon a time Las Vegas was the land of the great “boofet” and the 99¢ shrimp cocktail. Food and beverage was given away as freely as the complimentary watered-down drinks that were served by your toga donning Caesars cocktail waitress. F&B (that’s food and beverage) was a loss leader that paved the way for “play,” i.e. gaming revenues. Gaming was what brought the masses to Las Vegas… food and beverage was ancillary. The almighty comp was king, and it reigned supreme. It was the lure cast in search of the big catch, be it a minnow or a whale. The food and booze flowed as easily and steadily as the tears that were shed at the edge of the Hilton’s stage that featured the other King: Elvis Presley. The food quality… well, it was incredibly average. As was the service. But my oh my, it was cheap!
Then the tides shifted as surely as that of the entertainment that appeared on the marquees. As gaming proliferated in other parts of the country and the world, slots and table games became less of a draw. What had once been the number one source of revenue was now being replaced by other revenue streams, and leading the way was F&B.

Bruncheon anyone? Not that I’ve saved the best for last, but if anyone can serve up a decadent brunch it is moi! Wake up leisurely to the most scrumptious sweet and savory morsels on this spirited tour of Vegas’ most acclaimed establishments. We make brunch extra special by curating a lively, social dining experience complete with music, an array of superlative food, free-flowing cocktails, and outstanding VIP service. For those who don’t wish to imbibe at that hour, original mocktails are offered instead.
At Herringbone, you never know which A-listers you’ll spot. Chef Brian Malarkey of “Top Chef’’ and “The Taste’’ fame opened this favorite celebrity haunt that Eater just deemed one of the hottest restaurants in Las Vegas. Savor specialties such as the on-trend avocado toast garnished with jicama and jalapeno; eggs benedict elevated with crab, crispy leeks, and spicy hollandaise; and a refreshing watermelon-tomato salad. Quench your thirst with peach or strawberry yuzu Bellinis, as well as cold-pressed garden-fresh juices.
All the while, a DJ spins tunes to get the party started. Any morning is better with caramelized, custardy canelés, as well as golden brioche French toast gilded with vanilla mascarpone and almond brittle. Indulge in those treats with a chic French 75 (French gin, fresh lemon juice, Champagne) or an elegant non-alcoholic French Mule (velvet falernum, ginger beer, yuzu) at Bardot Brasserie.
